2022-12-17 20:53:18 +0000 UTC View PostI was gonna post the video of me making the tortellini but it didnt work/I have no idea how to find it. so heres a video of me folding the tortellini and the recipe Butternut Squash Tortellini *disclaimer, all of these measurements are not exact because I never write anything down or measure anything. rough guesses. don't be mad at me* make your pasta dough. pretty sure I did a cup of flour, one egg, one yolk, olive oil maybe a tablespoon or 2 and some salt. knead that bishhhh till its done, cover loosely with plastic wrap and let it hangout in the fridge till the fillings ready. ill do a video of this if anyone wants to see it. mad easy. π₯ about 2 cups of small chop/large dice butternut squash half of a small onion 2 garlic cloves pinch of fresh thyme olive oil, salt, pepper roast those bitches at 400ΒΊ for like 20 mins or till squash is soft. once its done, blend that in a food processor with a little olive oil. fold in 1/2 cup ricotta. taste to see if it needs salt. (I leave about 1/4 cup of the small diced squash out and fold it into the filling because every now and then I want a squashy bite, ya know?) then I put the filling in a piping bag or a ziplock and snip the corner off pasta time I cut my pasta ball in half and put in the pasta machine so it's not crazy fucking long to roll out. I rolled mine to a 6 :) laid it out and cut the circles and filled it. hard to explain. boiled it in salted water for 3ish mins did about 5 tbsp brown butter and fried some sage in it. tossed the pasta in there when it was done. topped it with toasted amaretti cookies and the fried sage leaves. fire. maybe ill make more tortellini next week and film it way better but ya that's the recipe lmao and a clip of me folding it idk if this even makes sense but π€·πΌββοΈπ lemme know if you try it
